As I share this recipe from our kitchen, am reminded of a conversation with our chef, who kept mentioning that patience was very important in making the perfect dish of chicken biryani. He said that time was crucial and the results you will get will be a direct result of the amount of time you will have invested in preparing and cooking the dish.
Chicken biryani is one of those authentic Kenyan dishes you prepare on special occasions. These are occasions that you want to impress your guests, with this i n mind it very crucial to get it right.
To get it right with this recipe, ensure you get all the ingredients paying special attention to the rice, use LONG grain rice ONLY, then ensure you have ample of time set aside to for preparation and cooking.

Recipe: CHICKEN BIRYANI
- Vegetable Oil
- Lots of chopped onions
- Minced garlic
- Minced ginger
- Mild chili
- Turmeric powder
- Ground cumin
- Blended tomatoes
- Plain yogurt
- Ground cardamom
- Boneless chicken cubes
- Powdered saffron
- Basmati long grain rice
- Chicken stock (if available)
Fry onions, garlic and ginger until soft and golden brown in color, add the chili, turmeric, cumin, salt and the tomatoes. Fry constantly stirring then add yogurt, cardamom and cinnamon, Cover and cook.
Add the chicken and cover with the cooking mixture and let it cook over low heat until semi dry and tender.
Cook the rice separately using chicken stock (if available) add saffron, cardamom, cloves, cinnamon sticks, ginger.
While serving; you can mix the two or serve them in layers for that finest color contrast…. Yummy!!!!
